OFFICIAL OZHARVEST AMBASSADOR DUTIES – COOKING AT FLORIADE

 

WOWZA!!! This past few months have been a whirlwind of excitement and change and learning and challenges and growth. My new job is just incredible, so much diversity. Too date, I’ve worked with the Prime Minister & Cabinet to create official events at Parliament House, dealt with famous performers and entertainers in preparation for the Australia Day live concert next year, to Manuka Oval working on the Prime Minister’s XI Cricket match. It’s a wonderful blend of both the Tourism and Hospitality Industries, and for the first time ever I can say I’ve got my feet firmly planted in both camps.

  

 Here in Canberra each Spring we host the Floriade Flower Festival, Commonwealth Park explodes with colour, entertainers, Food & Wine, Crafts & Arts, not to mention the million odd beautiful blooms. The flowerbeds showcase some of the regions finest gardeners and floristry student designs, who have been set the task to create working with in a theme.

SUPPLI (BRIE FILLED RISOTTO BALLS)

I cooked some awesome risotto the other night for the gang & even though everyone had 2nd’s, I was still left with a nice big bowl of  leftovers – too much to throw out, but not enough to make a meal for us all, so there it sat in the fridge beckoning to me –  but what to do with it?

I’ve always subscribed to the theory that if leftovers aren’t used creatively in the 48 hour timeframe that they sit staring at me from underneath their sealed cling wrapped bowl in the fridge, then they can happily be tossed.  I mean, fair’s fair right?  But., if suddenly a few extras arrive at your dinner table unannounced, then left overs suddenly take on a whole new dimension & magically become part of the food chain again.  But the dilemma continued. What to do with the rice?

I had some nice juicy steaks sitting in the fridge & some salad, so I served these Suppli’s up as an Entree & somehow managed to stretch the Steak & Salad for mains for all of us & what do you know huh, it was the leftovers, ahhh, I mean Suppli, that everyone raved about!  Who would’ve thought huh!!
