Chef Nasty screamed, “What’s the most expensive piece of equipment in a commercial kitchen?” to all of us baby chefs who looked blankly back at him that day at cooking college. We all wracked our brains for the right answer mentally attempting to retrieve AWOL information from our brains. Chef Nasty was a firm believer in tough love & into harsh & theatrical demonstrations to prove his point. Everyone automatically stepped quickly backwards as he emptied the entire contents of the garbage bin onto our workbench watching a gooey mess spill all over the floor.
The answer, after much humiliating accusations aimed at our intellect & ability to successfully complete our apprenticeships turned out to be – The Garbage Bin. Continue Reading ![]()
