PERSIAN CHICKEN MONEY BAGS W/ WATERMELON, MINT & FETTA SALAD

 

I decided it was time to give Maverick, that’s my freezer, a bit of clean. You see, I’d done the shopping and well if your anything like me you, you date, name and pack away your new goodies in an organised manner, although, maybe that’s a cheffy thing?

It was such a treat to find a Cryovak bag of slow cooked Persion Chicken that Momma whipped up and popped into my freezer (full care package style) a few months ago during my move. I’ll be honest, I’ve never really cooked Persion food before, nor have I eaten a lot of it. My memories of the few dishes a Persian school friend of mine used to serve up, were often much sweeter than I was used to eating, it seemed foreign to put fruit in with savoury dishes. 

 My memories of this food were correct, the chicken was relatively sweet, the cinnamon and dates really cut through. I decided to add some fresh herbs, and some more salt to balance the flavours. Traditionally the chicken would be served on a bed of rice or maybe some lentils, but I wanted something special and a little bit different.   

I dug a little deeper into Maverick and found the never ending packet of puff pastry, and voula…. The Persian Chicken Money Bag was born.

QUESADILLA

I blame this post entirely on a blackboard menu I walked past the other day offering up one of my favourite quick ‘n tasty meals – none other than the awesome Quesadilla.  As soon as I read it standing there all bold & temptingly beautiful on the blackboard, I realised I hadn’t made it for ages, so obviously had to rectify that little issue quick smart!

This is a perfect quick meal to throw together when you feel like hitting the couch with your favourite throw rug & watch a movie or two, or if your like me, settle on down to watch the new series hitting the little screen.  The adds sucked me in, making it impossible to not watch.  Yep, I’m talking about none other than Downton Abbey, so what does everyone think about the new soap?  Good huh?
