PROSCUITTO WRAPPED FIGS W/ DANISH BLUE CHEESE

 by Anna Johnston

We had a very special Family Dinner on Sunday night as my little brother popped the question to his gorgeous girlfriend and she said YES!!!!!  We couldn’t just let the occasion go by & wait for the official engagement party now could we, so we whipped up a bit of a special dinner party & matched some awesome drinkies to go with each course.

For entrees, we had Proscuitto Wrapped Figs with Danish Blue Cheese & paired them with  a Limited Edition Premium Bluetongue Lager, not only is this a quick & simple little taste tantaliser with figs being abundant at the moment, but its also one of the nicest marriages of flavours.  Check it out.

Proscuitto Wrapped Figs w/ Danish Blue Cheese

Serves 6

6 large firm and ripe Mission Figs
Extra virgin olive oil
Seasoning – Salt & Pepper (To Taste Only – You may not need Salt at all)
100g fresh Danish Blue Cheese cut into chunks
4-6 slices prosciutto cut in 1/2  lengthways

With a knife, make a cross on top of each fig about 2cm deep. This is where you are going to stuff the cheese.

Place the figs, cut side up, on a baking tray. Drizzle each fig with olive oil and sprinkle with some salt & pepper, the salt really is a taste only requirement as proscuitto is quiet salty and in most cases you really will not require any more salt. Gently push a chunk of cheese into the center of each fig.

Wrap each fig in a ribbon of prosciutto. If you want to serve warm, place in a 180 degree oven for about 10 minutes or until the cheese starts to melt.

Drizzle with Olive Oil and a sprinkle with some cracked pepper.

We served this tasty delight with a bottle of Limited Edition Premium Bluetongue Lager, a  triple hopped golden clear brew with a malty, fruity hit. I found this brew to be beautifully sweet with tropical fruit hints that lingered on through to the mildly bittered finish.

And guess who he asked to be Best Man….. ME!!!!

Oh Anna, what wonderful news – congratulations to your brother and his fiancé and how exciting that you are going to be his BestLady / BestWoman / BestGirl. :-D
I love the idea of your figs but sadly I don’t do blue cheese – I hope something lighter like feta will do them justice.

Fetta would work fabulously Mandy & so too do the milder cheeses like brie or camembert, so play around to suit your taste my friend – we’re just into the lovely strong blue’s here ;)

Those fig entrées are perfect…as perfect as the symbolism of an open heart translated from just looking at those opened figs. The flavour pairing is one of my favourites.

First of all my dear, CONGRATULATIONS to your brother and his new fiancee!!!!!! What wonderful and delightful news! And how awesome is that, that he asked you to be best man! So thrilled for all of you! This just brings a huge bright smile to my face, even getting a little teary-eyed. Congrats congrats!

Anna, I love figs! Once I bought a whole Costco case to try, and I ended up eating the whole case in one sitting. Lol. So much for everything in moderation there. Ha! This is such a wonderful recipe and I love how it’s super easy. The presentation is beautiful too. Kind of reminds me of a rose, a yummy “make my heart skip a beat” delicious rose :-P
I’m going to make this as soon as we get some nice ripe figs here. Thank you for sharing this wonderful recipe and news! Stalk ya later, deary ;-)

Isn’t it wonderful to be part of the blogging community, when you have such exciting news as this, you can share all the fun stuff with your pals :)
I’m pretty impressed you polished off a whole case of figs girl – now that’s dedication! But seriously, is there anything nicer than a perfectly ripe fig – I don’t blame you, I had problems with just 6 little figs sitting waiting for attention in my fridge for 24 hours, I’d have to keep going back if I had bounty like that :) :)

I’ve made a similar dish using medjool dates, but I like your idea of fresh figs much better…sometimes the dates are a bit too sweet. I have to ask, are you wearing a dress or a tux as the best man? ;-) – S

Oh yes, I’ve used dates in a similar style dish too., but fresh figs are ‘the business‘ Steve & work so much better :) I hope I’m allowed to wear a tux or suit but at this stage I’ve got no idea what the whole dress code is – we’re still in celebrating mood down here, plenty of time for business & decisions down the track ;)

Lovely, lovely LOVELY all ’round! My boss in Sydney had me making these one night for one of his famed dinner parties that offered endless food and terribly late! (dinner was supposed to be at nine pm and it was now midnight!) The only difference is we drizzled honey over them after they come out of the oven. Ahhh, my fave! Congrats on the upcoming nuptials of your bro and the role as BEST MAN!! How very moderne! x
