“Ode to the Dishy”

Stewards, Kitchen Hands and Dishy’s, sometimes even referred to as The Pig, Oinka or Piggy to name just a few!

Ever wondered what skill is really required to be an a top line Dish-Pig & what they actually do in fast paced kitchens? Well, despite getting called unfortuante & derogatory names these guys & gals are hugely important & crucial to the smooth running of a kitchen & makes sure everything is where it should be & are the key to our Mis En Plus.

So, what’s THE most important thing that The Dishy does?  In a nutshell, the Dishy makes everyone else’s job easier & Chefs couldn’t  work their magic without them.  The job involves a serious amount of mental aptitude, speed, skill & an ability to work in hot, noisy enclosed spaces, sometimes a little too close for comfort with other busy kitchen & restaurant staff as they dash by unloading plates filled with food scraps or hot pans still sizzling with hot oil!   As if that wasn’t enough, a good Dishy needs to keep an ear out for Chefs commands so understanding kitchen & Chef lingo is a must. Do you have what it takes to serve?

The other night I had dinner at one of my favourite restaurants and I got to thinking how much skill, knowledge & sheer talent is required by the Head Waiter of these massively successful restaurants.  In fact, as I sat there I realized he was modifying, amplifying & toning down his personality with each individual table, depending on his clients needs

The whole idea that “Anyone” can do this job is just plain wrong. Continue Reading
