MINI PINEAPPLE & PALM SUGAR PIGGY MUFFINS

When I was cheffing, I got to know my regular customers favourite foods and the ingredients they were into, and when I’d create menus it’d always be in the back of my mind to find a dish or two that’d be just for them.  Sometimes I’d find myself getting really excited thinking how much my favourite customers would love it & mentally be thinking “I’ll keep that idea going, Mr & Mrs Smith would love that dish“. And, you know what? Ive come to see the similarites with bloggers too.
 
For instance. When I think of LeQuan, I think of Seafood. When I think of Faith… I think of Middle Eastern dishes and when I think of Celia, I think of Chooks & some dam fine bread baking going on. But when I think of Laz, well then, I think of Pork!!  Take his Stuffed Organic Pork Lion & Tostone, & what about that  Pork Spare Ribs Pizza.  Ingenious right?  The Pork & Beans were a masterpiece that I can’t wait to try. THE APPLE & RHUBARB DANISH PASTRIES ORDEAL

I’ve had one of those weeks!  You know the kind, you feel flatter than a tack yet you’ve just got so much you need to do still, so lazing around (which is all I wanted to do) wasn’t an option.

Let me set the scene for you…. Friday afternoon & my temperature was sitting a little higher than was pleasant to deal with, I felt chilled to the bone & yet you could cook an egg on on my forehead.  I kinda felt like I was wearing a helmet that was 2 sizes too small, my head ached & I felt miserable & to make matters worse, everyone that greeted me at work told me how awful I looked.   Pretty sure your getting the gist of how I was feeling right?

Mr HG arrived home armed with a bucket load of goodies from the chemist that he assured me would combat the lurgy that was living within, so I decided to dose up and passed out in my comfy bed, willing the demons to exit my body whilst I slept.

Saturday was upon me all too soon, I wont go so far as saying I had a visit from George Clooney like my dear friend Cindy, but I sure did experience an action packed night of strange dreams & delirium that’s for sure. I actually felt pretty alright considering, maybe a little groggy from the drugs, but better, or so I thought.

It was a good thing food was of little interest to me in the days before I finally admitted I was sick, because I’d managed to run the fridge dry & the cupboards bare, but pretty impressed how creative one can be with minimal ingredients on hand all the same.

But, now I was starting to get better, I desperately needed to hit the shops and it seemed like a good idea at the time that I join the Costco crew and shop there.   But nuh, it was a bad idea, the lines were huge & Im talking 2 hours long my friends.  Clearly I wasn’t well enough to stand in line for Cosco this week I told myself, so I took myself off to my usual shops.  Good idea right?  Nuh, bad idea, a very expensive bad idea as it turned out as no sooner had I started in on my familiar food gathering mission that I found myself becoming vague & tired & forgetful.
