Chicken & Prawn Laksa

Without ever really thinking about it too much, or planning it, I’ve somehow become a Laksa snob, its my ‘go-to’ dish of spicy coconut curried goodness whenever those rare indulgent night-in with a good movie & a take-away are on the menu . 

Over the years I’ve tried Laksa’s from just about everywhere; some great, some amazing & some ‘not so much’.  In fact, if I think about it, I’ve probably invested quite a hefty sum into trying out Laksa’s whenever I spot them on the menu somewhere. But when you find yourself driving clear across town to order a Laksa & the almost non-English speaking guy behind the counter breaks into an enormous grin of a welcoming greeting to you & says in his heavily accented sing song voice words that sound remarkably like “chicnlukza?”, you suddenly realise you have somehow become ‘a regular’. BREAKFAST FOR DINNER – ZUCCHINI FRITTERS W/ POACHED EGGS, SMOKED SALMON & HOLLANDAISE SAUCE

I love a good breakfast on the weekend, a really fancy rich big breakfast!  My weekends are not about a quick slice of toast on the run with one eye on the clock for this girl.  No way! Weekends are about resting & taking things easy like catching up on sleep.  The trouble is, I sort of like love sleeping in on the weekends even more.  But, no one said you have to eat breakfast in the morning now did they?

A fun way to get some vegies in your diet, is to turn them into tasty fritters. They really are versatile little patties & are great served as a side dish or for brekkie at dinner time like I do on those lazy Saturday’s. Years working in kitchens & finishing super late at night, I’d often feel hungry when I got home, but couldn’t think of anything worse than facing foods I’d been cooking all evening for the restaurant, so cooking a quick and tasty dinner often involved eggs.
