OODLES OF NOODLES

This week was a busy one, the hospitality industry has magically slipped into the next gear the pedal hits the medal, racing towards the holiday season.  Being busy at work usually means less interest & time available to create family dinners at home that demand lots of thought & cooking time, so the quick stir fry’s are the way to go for us.

If you became a Chef in my hometown of Canberra, affectionately referred to as ‘The Berra’ by those who live here, then chances are you’ve trained with some awesome Asian Chefs like I did.  This quick and tangy Asian influenced dish was mastered many a year ago as an apprentice when I worked along side some real characters.  Wayan, who was an old-soul Balinese chef who constantly reminded me that the food secrets and recipes of Bali are kept under lock and key and I am lucky to have such information!  Whether that was true or not I’ll never know, we just weren’t too sure if he was joking or serious!! BUTTER ME UP – BUTTER CHICKEN TO DIE FOR!

We had the full contingent for Family Dinner this week, which makes for some lively discussions on recipes & flavor pairings, there is nothing like a few Chefs adding their opinions & suggestions to whatever dish has been served up to add to the mix, but I’m happy to say this one went over nicely.

The creamy goodness of Butter Chicken is on every menu in any Indian restaurant in countries all over the world. Depending on where you are, the taste varies from restaurant to restaurant, even in India itself you’ll never find two cooks making the same butter chicken.
