SUMMER STIR FRY IN 10 MINUTES!

This is the busiest time of the year for me.  I don’t know anyone who isn’t crazy busy & run off their feet as the last days tick on by before the Christmas frenzy starts to slow, but for we folk in the hospitality biz, this is a time of sheer franticness & long, long days (ouch, that reminds me of my sore feet – I can’t even remember when I stopped walking & started running). I’m sure I’ve been on my feet for around 12 hours today already.  The thought of standing for too much longer today while I cook something decent to eat just about has me dreaming up quick take out or dial in ideas!  But I’m craving real food, I bet you can relate right?

When your ridiculously busy, even stopping to eat sort of becomes a chore.  I vaguely remember walking into the staff room before getting pulled away to avert another near crisis of some sort but that was 6 hours ago.  Know the feeling?  Of course you do – this is one crazy time of the year isn’t it.  No wonder everyone is starting to look a little frazzled! THIS LITTLE PIGGY


It’s the time of year Chefs start playing around with ideas on how to tweek & revamp dishes for the festive holiday season.  Yes, my friends – its just 3 months till Christmas!  So, what better place to play around with a couple of ideas than on your family right?

‘Hmmm…., lets see.  I had dried figs, toasted slivered almonds, fresh parsley, potatoes & a nice little plump boned leg of pork & just a few spears of asparagus.  What shall I create for family dinner this week?’ I ask out loud!

I often talk to my ingredients; mentally tasting each item as it paints my palette, I could feel a masterpiece being created. This really was a no-brainer considering all the rich foods I’d been pondering on lately putting Christmas menus together.  I played around with fig and almond stuffed slow roasted pork on potato rosti, & maybe with a little sliver or two of crackling on top, but how would it taste?
