ISRAELI COUS COUS & A LITTLE CURRY

There are so many different cuisines & cooking techniques I’d love to master.  Not just cook them according to their recipes, but really, really sink my teeth into the culture of the cuisines & learn to be super good at it.

I figure I must have been drooling a little too loudly at times when I’ve spotted a dam fine curry recipe, because a couple of months ago, totally out of the blue I received an awesome present from Celia – 2 hefty bags of curry no less from her favourite spice merchant.  A Malaysian Curry Powder & a Hot Indian Curry Powder, and yet apart from using them in little dishes like this, I really haven’t done that much with them.

My drooling obviously got louder and another present arrived out of the blue, this time from Ms Spicie Foodie herself, (aka Nancy) in the form of a beautiful little book called ‘An Epiphany of the Senses‘.  This little gem of hers has over 20 amazing, seriously drool worthy recipes she’s has prepared & it finally consciously clicked.  I’m going to cook lots of Nancy’s recipes, with a twist of Anna in between & learn how to make some awesome curries, work with exotic spices and flavours, no more drooling for Anna, just action. OVEN ROASTED DUCK W/ RISOTTO & ORANGE HERB SALAD

For the main course of the impromptu engagement dinner party for Kris & Megs, we had this yummy oven roasted duck on a bed of creamy risotto & a little orange herb salad, the combination of flavours worked a treat.  I didn’t fuss too much with the duck, just roasted it off in the oven after frying the duck breasts skin side down first to really crisp up the duck skin; then popped the duck breasts in a preheated oven 180C degrees for 13 minutes until they were a perfect pink, well that’s how we like our duck.  Duck is an oily meat so I didn’t use an oil to seal, just a sprinkle of salt & cracked black pepper.  I used 1 small duck breast per person.
