Debra from bagnidilucca has nominated my fine blog for an award type thang that is sweeping the blogoshere at the moment. It’s a simple process in which bloggers are invited to select posts from 7 catgories and invite other bloggers to do the same. I took a trip down memory lane and here’s what I’ve come up with.

#1. Most Popular – Chefs Without Borders
Every now & then I like introducing you to some chef buddies of mine & this week I’m so excited to share with you all ‘Chefs Without Borders ‘. If you haven’t heard of these guys yet, then get ready because they’ve already got one Tasty Award under their belt & their videos of the street food tours they’ve done through Asia are brilliant. Being typical chefs it wasn’t good enough for them to just stand back & watch, they had to get in there & get their hands dirty.
Q. Whats the most disgusting thing you’ve ever eaten?
Bull penis? Fermented tofu? Raw lizard salad with fresh blood? Duck fetus? Or maybe ant eggs… MMmm all this talk about food is making me hungry!
#2. Most Controversial – How many carrots do you have to dice to make 100k a year?
A new emerging economy is taking place & many of the old methods are now redundant. Customers are changing & are now setting the standards; this is no time to put your head in the sand guys. So take action, step out of the kitchen once in a while & implement some new strategies. You’ll be pleasantly surprised at what a little communication & relationship building can do for your business & bank account.
#3. Most Helpful – A gift for aspiring Chefs & Cooks
As time went on & I was in charge of my own kitchens, I found that advice was all too true, too many really bright & enthusiastic young Chefs were getting browned off & were loosing their enthusiasm because even though they’d studied hard & did their best, they simply didn’t have enough basic technical information, or an understanding of how commercial kitchens operated & they needed help. Always wanting to be part of the solution & not the problem, I started sharing my notes which over time became handouts & things have grown, where today I’ve created a Free ‘Back to Basics’ series. It’s my way of paying it forward & giving back to an industry that I’m still crazy about.

#4. Most beautiful - My Marshmallow World & White Chocolate Truffles!
It’s a marshmallow world in the winter
When the snow comes to cover the ground
It’s the time for play, it’s a whipped cream day
I wait for it the whole year round.
Hand in hand, me and my Mr glide across the ice to the tunes of Frank Sinatra & Dean Martin wafting through the Square & transporting us to another time, a time long before I existed, snowflakes (well foam in my case, it doesn’t actually snow too much here in The Berra) gracefully float through the air and melt as they land on our warm skin.
#5. Most Surprisingly Successful – Marmalade Days
I’m pretty amazed at times that both my brother Kris & I made a career out of cooking, because we still groan at the thought of dangling precariously from heavily laden & sticky apricot trees, picking the last of the summer fruit for jam making. We’re still pretty sure it was a punishment for some childhood wrong doing; Oh how we hated the fruit picking part! It sort of sounds idyllic now though doesn’t it; but anyone whose ever come off worse for the wear after a rotten apricot throwing contest knows it aint all glamour my friends!
#6. Most Under Rated – The adventures of a bottle from Chateau La Mission
I lived precariously for years with Monsieur Kris, always there on the sidelines through many a loud gathering, where all my colleagues rested in racks along side me were opened. But not I, never me. I was always in good view of the passing parade of his bikes, was it just me or were those 2 wheel monsters becoming grander? I must have been asleep when our bike left us, I should have said good bye, as we had some fine memories that old fellow & I, did we not?
#7. Most Proud Of – On behalf of the Chefs Network…
I always thought facing down a team of angry chefs when I was just 23 years of age to be a defining moment in overcoming my fears & carrying on regardless, but I’ve now replaced that episode to the 3 minutes before stepping on stage at The National Press Club of Australia to perform my first Ambassador duties for OzHarvest Canberra.
